  • ½ cup panko, plus more if needed
  • 3 dried apricot halves, quartered
  • 2 scallions, trimmed and chopped
  • 1 large egg
  • ½ garlic clove, chopped
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint, plus leaves for garnish
  • ¾ teaspoon fine salt
  • ¼ teaspoon sweet smoked paprika
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon ground black pepper
  • 3 tablespoons pine nuts
  • 2 cups canola oil or other neutral oil, for frying
