Kkakdugi (Radish Kimchi)

Ingredients
  • 500g radish
  • 30g onion
  • 30g pear
  • 10g spring onion
  • 1 tsp salt
  • 1 tsp sugar
  •  
  • subheading: Seasoning:
  • 2 tbsp Korean chilli powder
  • 1 tbsp anchovy sauce
  • 1 tbsp preserved shrimp
  • 2 tsp sugar
  • 1 tsp crushed garlic
Steps
  1. Peel the radish and cut into 1.5cm cubes
  2. Sprinkle with salt and sugar and leave for 1 hour. Drain well.
  3. Cut onion, pear and spring onion into small pieces.
  4. Add chilli powder to the radish cubes and mix for 2 minutes to colour the radish well.
  5. Add remaining seasoning ingredients and mix.
  6. Add onion, pear, spring onions and mix.
