Healthy Chicken Alfredo (Easy to Make!)
Ingredients

  • 3 cups chopped cauliflower, 12 ounces
  • 1 cup chicken stock
  • 1 to 2 tablespoons nutritional yeast, see notes
  • ½ tablespoon freshly squeezed lemon juice
  • 1 to 2 teaspoons sea salt
  • ½ teaspoon soy sauce, gluten-free, if needed

  • 12 ounces uncooked pasta, we like fettuccini or linguini
  • 4 teaspoons olive oil, divided
  • 3 ounces baby spinach
  • 2 chicken breasts, cut into bite-sized pieces
  • ½ teaspoon EACH: sea salt and pepper
