  • Fat drippings from roast chicken, or 3 tbsp of butter
  • ½ onion, diced

  • 1 celery rib, diced
  • 1.5 tbsp all purpose flour or gluten free flour
  • ½ cup dry white wine, sauvignon blanc is my fave
  • 3 sprigs of thyme
  • 2 cups of chicken stock
  • salt and pepper
