Thai Chicken Salad
Ingredients
  • 5 cups greens (kale, spinach, or mixed greens are fine)
  • 2 thinly sliced or grated carrots (I used a broccoli/carrot slaw from Trader Joe's because it's easy)
  • ¼ cup micro greens
  • 2 breasts chicken
  • ¼ cup shaved almonds
  • ½ cup soy sauce
  • 2 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tbs olive oil
  • salt & pepper to taste
  • note: top with favorite peanut dressing
Steps
  1. Heat large pan on medium heat and add olive oil.  Season chicken breasts with cayenne, paprika, salt and pepper and add to pan.  Cook for 10 to 15 minutes, adding soy sauce to pan half way through.  Let chicken cool while assembling the rest of the salad.
  2. Toss together greens, carrots, almonds, dressing, and top with chicken and micro greens.
