One Pot Quinoa, Chicken and Broccoli

  • 3 large garlic cloves, minced
  • 1 large carrot, shredded
  • 1 tsp olive oil, extra virgin
  • 1 ½ cups quinoa, uncooked
  • 3 cups boiling water
  • ¾ tsp himalayan pink salt
  • ½ tsp cumin, ground
  • 2 bay leaves
  • 1 lb broccoli, chopped
