Shoyu Chicken by Rich Lum
Ingredients
  • 5 pounds chicken thighs..bone in , skin on
  • 1 cup Shoyu (soy sauce)
  • 1 cup water
  • 1 cup granulated sugar
  • 1 sweet onion, chopped
  • 2 to 3 tsp minced garlic
  • 4 to 5 slivers of ginger
  • 3 to 4 tsp of Cooking Mirin
Steps
  1. Mix all ingredients, except the chicken, in your IP
  2. Place the chicken in mixture
  3. Manual setting on high for 15 minutes with a 10 minute NPR
  4. Place chicken on a foil lined baking pan and broil until the skin is caramelized
  5. Serve over hot pot in pot rice *
  6. You could thicken the sauce with a cornstarch slurry (3 Tablespoons Cornstarch + 3 Tablespoons cold water )
