Ingredients
  • 65 g (½ cup) cashews raw and unsalted- use half almonds, half almond meal
  • 45 g (½ cup) desiccated coconut
  • lemon juice from half a lemon (approx 1 tbs)
  • lemon zest finely grated, from 1 lemon
  • 2 tbs rice malt syrup (or honey)-use sugar free maple syrup or Lakanto bakers syrup
  • desiccated coconut extra, for rolling (approx ½ cup)
  • Add 1 scoop vanilla protein powder
  • Add half tbsp chia seeds
