Ingredients
  • 6 cups broccoli, chopped into bite-size pieces
  • 1 apple, chopped
  • ½ cup raw sunflower seeds
  • 1 small avocado, cubed
  • 1 cup chickpeas
  • ½ cup red onion, finely chopped
  • ½ cup raisins
  • subheading: CASHEW DRESSING:
  • 1 cup raw cashews, soaked at least 1 to 2 hours
  • ⅓ cup fresh water
  • 1 ½ tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup
  • 1 tbsp shallot, chopped
  • 1 clove garlic, chopped
  • ½ tsp sea salt
  • ½ tsp dijon mustard
