Ingredients
- 6 cups broccoli, chopped into bite-size pieces
- 1 apple, chopped
- ½ cup raw sunflower seeds
- 1 small avocado, cubed
- 1 cup chickpeas
- ½ cup red onion, finely chopped
- ½ cup raisins
- subheading: CASHEW DRESSING:
- 1 cup raw cashews, soaked at least 1 to 2 hours
- ⅓ cup fresh water
- 1 ½ tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tbsp maple syrup
- 1 tbsp shallot, chopped
- 1 clove garlic, chopped
- ½ tsp sea salt
- ½ tsp dijon mustard
