Jamika Pessoa Cooks Mediterranean Superfood Mac N Cheese
Ingredients
  • 8 oz. Chickpea pasta (penne or cavatappi) or pasta of your choice
  • 8 cups of water
  • 1 tablespoon of kosher or sea salt
  • 2 tablespoons of olive oil
  • 1 zucchini, diced into 1-inch pieces
  • ¼ cup sun dried tomatoes, chopped
  • ½ red onion, diced into 1-inch pieces
  • 2 cloves of garlic, minced
  • ½ cup low fat cottage cheese (small curds)
  • 8 oz. fresh mozzarella cheese, divided
  • 4 oz. crumbled feta cheese, divided
  • ½ cup of water drained from cooked pasta
  • ½ cup nutritional yeast
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon red pepper chili flakes (optional)
  • Fresh basil leaves for garnish
