  • 1 to 2 lbs. chicken tenders, cut into bite-sized pieces
  • 1½ cups fresh spinach
  • ½ cup cooked cauliflower
  • 1 can refried beans (low-fat)
  • 1 can diced tomatoes with chilies
  • ¼ cup chopped green pepper
  • 1 cup corn (optional; corn is not weight-loss promoting)
  • 1 can black beans
