Instant Pot Quinoa Fried Rice
Ingredients
  • 1 tablespoon sesame oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced or grated
  • 1 tablespoon minced or grated fresh ginger
  • 4 cups diced mixed veggies (I used carrot, bell pepper, mushrooms, and broccoli)
  • 1 lb chicken breasts, cut into 1-inch chunks
  • 1 ½ cups chicken broth
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sriracha
  • 1 ½ cups quinoa
  • For topping: sesame seeds, cashews, chopped green onion
