Traditional Russian Cabbage Soup (Shchi)

3 tablespoons unsalted butter

1 large yellow onion, coarsely chopped

1 medium head cabbage, about 1.14kg, shredded (about 10 cups)

1 large carrot, peeled and coarsely grated

1 stalk celery, coarsely chopped

1 bay leaf

8 cups vegetable stock, or water

2 large russet potatoes, peeled and coarsely chopped

2 large tomatoes, peeled, seeded, and chopped, or 1 (400g) can diced tomatoes

Salt, to taste

Freshly ground black pepper, to taste

Sour cream, for garnish

Fresh dill, for garnish
