Gochujang Grilled Pork Tenderloin Salad

  • 1 small head butter lettuce, torn into bite-sized pieces
  • 2 cups sugar snap peas, sliced on the diagonal
  • ½ cup lightly packed mint and/or cilantro leaves, coarsely chopped
  • 5 medium radishes, thinly sliced
  • 2 scallions, thinly sliced
  • ⅓ cup roasted, salted peanuts, coarsely chopped
