Vietnamese Lemongrass Pork Bowl
Ingredients
  • 500g (1 lb) pork mince
  • 1 lemongrass stalk, bruised and white part finely chopped
  • 2 tbsp vegetable oil
  • 1 small onion, finely sliced
  • 2 large mild chillies (or capsicum/bell peppers), finely sliced
  • 3 garlic cloves, finely chopped
  • 2 tbsp brown sugar
  • 2 tbsp fish sauce
  • 1 tsp sweet dark soy sauce
  • 1 tsp corn flour (cornstarch) mixed with 1 tsp water
  • ¼ tsp ground pepper.
  • 1 birds’ eye chilli, finely sliced
  • 2 tbsp roughly chopped coriander (cilantro) to serve (optional)
  • steamed rice to serve
