Turkey and Wild Rice Salad
Ingredients
  • 6oz package long grain and wild rice mix
  • 8 oz cooked turkey breast, chopped
  • 1 medium apple, cored and chopped (⅔c)
  • 1 stalk celery, thinly sliced (½c)
  • ¼ c dried cherries
  • ¼ c chopped pecans, toasted
  • 2 tbls cider vinegar
  • 2 tbls canola oil
  • ½ tsp snipped fresh thyme or ¼tsp dried thyme, crushed
  • ¼ tsp black pepper
  • ⅛ tsp salt
Steps
  1. 1.Prepare rice mix according to package directions, omitting the season packet; discard the seasoning packet or reserve for another use. Spread rice mixture on a baking sheet to cool completely.
  2. 2.In a bowl combine rice mixture, turkey, apple, celery, dried cherries, and pecans. For dressing, in a screw-top jar combine vinegar, oil, thyme, pepper, and salt. Cover and shake well. Pour dressing over salad and toss to coat. Cover and chill until ready to serve or up to 24hrs.
