Herby Farro with Butternut Squash and Sour Cream

  • ½ jalapeño, seeded (if desired) and coarsely chopped
  • Kosher salt and black pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 ½ cups farro
  • 1 pound peeled butternut squash, cut into ¾-inch pieces (about 3 cups)
  • ½ cup sour cream
  • 1 teaspoon lime zest plus 2 tablespoons juice (from 1 lime)
