Cold-Oven Thanksgiving Turkey
Ingredients
  • 1 whole turkey, frozen* or fresh, neck and giblets removed and reserved for gravy
  • ½ cup kosher salt
  • 2 tbs baking powder (optional, this makes the skin super crackly)
  • 8 tbs butter
  • 3 tbs soy sauce
  • 3 tbs honey or maple syrup (optional; if you like a sweet turkey)
  • 1 tbs dry rub or spices (optional and up to you; make sure any blends have zero added salt, because whoooo boy there’s already enough salt happening here)

  • Paper towels
  • Large baking tray
  • Oven-safe cooling rack (like this one), or roasting rack (like this one)
  • A large piece of cheesecloth (if you really want; I don’t use one)
  • A box fan and/or a hairdryer (if you’re really, really serious about crispy skin)
  • Instant-read meat thermometer ← YOU NEED THIS, DO NOT MAKE TURKEY WITHOUT THIS. Any model will do. I have this one.
  • Medium-size microwave-safe bowl
  • Basting brush
