Ingredients
  • 2 lb stew meat cut into 1" squares
  • 2 tsp salt
  • ¼ tsp pepper
  • 3 T shortening
  • 3 cups hot water
  • ⅛ tsp thyme
  • 6 small onions, large dice
  • 18 oz. carrots, large dice
  • 3 pounds potatoes, large dice
  • 1 cup frozen peas
Steps
  1. Melt shortening in large pan and brown meat. When meat is brown on all sides, add water and thyme. Cover pan and bring to a boil, then turn down to simmer for about 1 hour.
  2. Add vegetables. Turn heat to high until boiling, then reduce heat to simmer for about 30 minutes.
  3. Stir in frozen peas. Cook about 5 minutes until peas are heated through. Serve at once.
Notes
  • optional: ¼ cup all purpose flour before browning
