Crumbed minced chicken with carrot and zucchini
Ingredients
  • subheading: Nuggets:
  • 2 chicken breasts
  • 2 zucchini, peeled
  • 2 carrots
  • ½ tsp garlic powder
  • ½ tsp herb and garlic seasoning
  •

  • 1 Cup panko breadcrumbs
  • ½ Cup Parmesan cheese
Steps

  2. Fit Ultrablade knife and add breadcrumbs and Parmesan cheese to bowl. Sp 12, 60 secs
  3. Transfer to a plate.
  4. subheading: Nuggets:
  5. Fit Ultrablade knife and add roughly chopped zucchini to bowl. Set internal steamer, lined with foil. Process on sp 12 for 20 seconds. Scrape down sides and process for another 20 seconds.
  6. Transfer to a clean bowl.
  7. Repeat process with carrot
  8. Repeat with chicken. Leave in bowl.
  9. Return zuccini and carrot to bowl with chicken. Add seasoning.
  10. Speed 5 until combined.
  11. subheading: Assembly:
  12. Fit rectangle 2-hole attachment to Tupperware snack press
  13. Push chicken mix through and chop into 1inch wide pieces.
  14. Put on plate and cover with crumb mix.
  15. Bake in 200°C oven for 20 minutes.
Notes
  • Once crumbed, pieces will freeze and can be cooked from frozen.
