Keto - Beef Mushroom Stroganoff
Serve over riced cauliflower.  This dish can be cooked using the saute function of the Instant Pot.

Ingredients
  • Ground beef (see notes for amount)
  • Olive oil
  • 2 cloves chopped garlic
  • ½ medium diced onion
  • 2 tab butter
  • 1 pound sliced white mushrooms
  • 3 tab prepared mustard*
  • 2 teas thyme
  • 1 teas tarragon
  • ½ teas dill
  • ¼ teas nutmeg
  • 16 ounces Sour Cream
  • Salt
  • Pepper
Steps
  1. In large sauce pot or Instant Pot liner, brown beef (*drain and set aside).
  2. In the same pot, heat olive oil.
  3. Saute garlic on low until lightly browned.
  4. Add onions and saute until slightly translucent, then remove from heat.
  5. In a skillet, melt butter.
  6. Add mushrooms to skillet and saute on low, cover and stir occasionally.
  7. Once liquid accumulates in the mushrooms, remove lid and allow liquid to evaporate and cook mushrooms until lightly browned.
  8. Add meat and browned mushrooms back into the garlic and onion, and mix.
  9. Return pot to heat and rewarm.
  10. Add prepared mustard, thyme, tarragon, dill and nutmeg, and mix well.
  11. Add sour cream.
  12. Add salt and pepper to taste.
Notes
  • *Mustard... regular lunch condiment from a yellow squirt bottle
  • Carbs:  28 (6 from mushrooms, 3 from ½ onion, 1 from sour cream.  If you want to reduce carbs, reduce sour cream and add heavy whipping cream.
  • Meat: Use more or less depending upon how many grams of protein you need per serving.  By the end f the day, you probably have an idea of how many grams of protein you want in your meal.  If you are also feeding someone that is not Keto, consider using a lesser amount in the dish with extra on the side just to add to the Keto plates.  To help ensure the dish is leaner for non-Keto family members, I also cook the ground beef in a bit of water and drain the fatty water when done.  If Keto eaters need more fat for the day, adding some heavy whipping cream mixed into the Keto plates when served, or better yet, adding coconut oil in "Bullet Proof Coffee" in the morning.
  • 1.5 lbs 80% lean ground beef, cooked and drained yields just over a pound (18 ounces) cooked ground beef (1146 calories, 144 grams protein and 66 grams fat).  This provides 36 grams protein per ¼th serving  or 29 per 1/5th serving.
  • 2 lbs 80% lean ground beef, cooked and drained yields 1 ½ pounds (24 ounces) cooked ground beef (1528 calories, 192 grams protein and 88 grams fat).  This provides 48 grams protein per ¼th serving  or 38 per 1/5th serving.
  • 3 lbs 80% lean ground beef, cooked and drained yields 2.25 lbs (36 ounces) cooked ground beef (2292 calories, 288 grams protein and 132 grams fat).  This provides 72 grams protein per ¼th serving  or 58 per 1/5th serving.
