Jackfruit Pulled Pork Vegan Southwest Salad with Avocado Lime Dressing

  • 1 tsp. brown sugar
  • 1 Tbsp. extra-virgin olive oil
  • ½ cup yellow onion diced
  • 2 clove garlic minced

  • 2 heads romaine lettuce chopped
  • 2 ½ cups chopped tomatoes
  • ¼ cup cilantro chopped
  • ¼ cup red onions thinly sliced
  • 1 15 oz. can low-sodium black beans rinsed and drained
  • 1 fresh Hass avocado* halved, pitted, peeled and cubed
  • subheading: For the Avocado Lime dressing:
  • 1 fresh Hass avocado* halved, pitted and peeled
  • 1 lime zest and juice (¼ cup)
  • 1 tsp. apple cider vinegar
  • ½ chipotle in adobo omit for less spicy version
  • 1 Tbsp. extra-virgin olive oil
  • 1 Tbsp. chopped cilantro
