Low Carb Crustless Taco Pie
Ingredients
  • 1 lb (450g) lean ground beef
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • 2 tablespoons homemade taco seasoning (or store-bought low-carb version)
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • ½ cup heavy cream
  • ¼ cup unsweetened almond milk (or any low-carb milk of choice)
  • Salt and pepper to taste
  • Optional toppings: chopped lettuce, diced tomatoes, sliced avocado, sour cream, salsa
