Chef Heather's Chicken Cauliflower Fried "Rice"
Ingredients
  • 1 large boneless skinless chicken breast, medium diced
  •  
  • sesame oil
  •  
  • 1 onion, diced medium
  •  
  • 1 Tbl minced garlic
  •  
  • ½ tsp. Ground ginger
  •  
  • 3 eggs
  •  
  • 1 ¾ cup frozen peas or frozen peas and carrots
  •  
  • 1 12 oz bag frozen riced cauliflower
  •  
  • Low sodium soy sauce
  •  
  • Rice wine vinegar (optional)
Steps
  1. Sauteed chicken in sesame oil until cooked through - set aside
  2. Sauteed onions, garlic and ginger in sesame oil - set aside
  3. Scramble the eggs - set aside
  4. Heat frozen cauliflower and veggies until hot
  5. Add chicken, onion mixture and eggs back to pan to warm through
  6. Add soy sauce @ 4 Tbl, rice wine vinegar @ 1 Tbl and more sesame oil to taste.
  7. Serve immediately.
