St. John Beans and Bacon
Ingredients
  • 1 pound dried white beans, soaked overnight
  • ¼ cup duck fat or extra-virgin olive oil
  • 1 pound salt pork or pancetta, cut into large lardons (about ¼ inch by 1 inch)
  • 1 quart good-quality chicken or meat stock
  • 6 garlic cloves, left whole (no need to peel)
  • 1 large bouquet garni of sage, thyme, rosemary and parsley, tied
  • 2 large white or yellow onions, chopped
  • 2 leeks, trimmed, white and pale green parts thinly sliced
  • 3 celery stalks, thinly sliced
  • Sea salt and black pepper
  • 3 tablespoons chopped fresh sage
  • 1 (14-ounce) can Italian plum tomatoes and their juices
