Wakame Seaweed Salad
Ingredients
  • ¾ cup dried, cut wakame seaweed
  • 4 ½ to 6 cups cold water, for soaking
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon grated fresh ginger
  • ½ teaspoon sugar
  • ¾ teaspoon kosher salt
  • 1 ½ tablespoons toasted sesame oil
  • 1 small avocado
  • 1 small carrot, peeled and grated (⅓ packed cup)
  • 4 small red radishes, cut into small dice (about ½ cup)
