Ingredients

- 115g oil
- 45g egg white.
- 60g whole egg.
- 20g honey
- 2)
- 100g Low protein flour
- 20g cornflour
- 1tsp baking powder
- 3)
- 140g yolks
- 4)
- 340g egg whites
- 120g castor sugar
- Pinch of cream of tartar
- Pinch of salt

- Roasted top honey cheezy cake

- 4 x 6inch round pan
- Cheese mixture
- Butter salted 50g, oil 23g, honey 23g, cheddar cheese slice 80g, cream 70g.
- Mix all and cook on a brain Marie till cheese dissolved and well mixed.
- Method
- Mix 1) add in 2)mix well then add 3) mix well and prepared to use.
- Whisk 4) till firm peak ( rough estimation of firmness cos recipe never mentioned till which level)
- Fold ⅓ of meringue into yolk batter using knife strokes till combined. Then pour into meringue and continue to use knife strokes, mix till well combined.
- Pour batter into pans and tap a few times to release air bubbles.
- Bake at 200c top fire, 150c bottom fire
- For 8 to 10mins.
- 150c top fire, 170c bottom fire for 17 mins.
- (Every individual oven's different,above temperature is for reference only).
- After bake, cooled then chilled the cake with the mould in the freezer overnight
- Unmould cake from freezer, no need to thaw then fill the top with 35 to 40g of cheese mixture. Grill the cake with 250c for 6 to 8mins. Done
