1 cup sliced carrots

½ cup diced onion

½ cup diced celery , or peas

1 to 2 cloves garlic , minced

⅓ cup all-purpose flour

4 medium russet potatoes , peeled and diced

3 to 4 cups chicken stock or broth (see notes)

1 to 1 ½ cup diced ham (leftover ham or steak ham works great)

½ teaspoon Kosher salt , plus more to taste

¼ teaspoon ground black pepper , plus more to taste

1 cup milk

1 cup half-and-half , or heavy cream

Optional toppings: Shredded cheese, Bacon, Sliced green onions, Thyme
