  • 1 pound butternut squash (peeled, seeded and cut into ½-inch cubes)
  • 1 large onion (minced)
  • 4 cloves garlic (minced)
  • Salt and pepper
  • ½ cup dry white wine or vermouth
  • ½ cup freshly grated Parmesan
  • 2 Tablespoons chopped fresh parsley
  • ½ cup crumbled goat cheese
