Chocolate Mint pudding
Ingredients
  • 13 oz / 365g avocado flesh (after skin and pit removed)
  • ½ cup / 4 fl oz. canned thick coconut milk
  • 1 cup unsweetened cocoa powder
  • Pinch sea salt
  • ¼ tsp pure peppermint extract (Do not guess, it is very strong)
  • 8 TBSP Xylitol or equivalent sweetener (increase or decrease to taste as required)
  • 2 TBSP cocoa nibs (NOT chocolate chips, but if you really don’t like the bitterness of the nibs, use chips)
