Eggplant Roll Stuffed W/ Ground Pork
Ingredients
  • subheading: To make the eggplant rolls (Makes 8 rolls):
  • 1 long and straight eggplant
  • 150g / ⅓ lb of ground pork
  • ¼ tsp of white pepper
  • ¼ tsp of five spice powder
  • 2 tsp of soy sauce
  • ½ tbsp of oyster sauce
  • ½ tbsp of minced garlic
  • 1 tsp of minced ginger
  • 2 tbsp of diced scallions
  • ¼ cup of cornstarch
  • ½ cup of oil to fry the eggplant roll
  • subheading: To make the dipping sauce:
  • 1.5 tsp of sugar
  • 2 small Thai bird eye chilies, diced
  • 1 clove of garlic, diced
  • 1 tbsp of fish sauce
  • 1 tbsp of lime juice
