- 1 onion, chopped
- 2 cloves of garlic, minced or ¼ Tsp granulated garlic
- 1 ½ cup green or brown lentils, rinsed
- ½ cup red lentils, rinsed
- 8 cups vegetable broth (I use Imagine No-Chicken Vegetable Broth)
- 2 medium Yukon Gold potatoes, peeled and chunked
- 1 (14.5 oz) can diced tomatoes
- 1 cup diced carrots
- 2 celery stalks, diced
- 1 ½ Tsp turmeric
- 1 TBS ground cumin
- 1 TBS dried parsley
- 2 TBS lemon juice
- ½ cup water
- salt to taste
