Mocha Low Carb Ice Cream Bars
Ingredients
  • 3 cups full fat coconut milk, divided (You can also make these with regular whipping cream in place of the coconut milk)
  • 2 tsp grassfed gelatin (or one envelop Knox gelatin)
  • ½ cup Swerve Sweetener
  • 1 packet Starbucks Via instant coffee or 1 tsp instant espresso powder
  • 3 egg yolks
  • ½ tsp vanilla extract
  • 2 ounces sugar-free chocolate or 80 to 90% cacao chocolate like Lindt, chopped
