Plant Based Taco Meat

Ingredients
  • I make taco meat this way: cook 1 cup of dried lentils in water to cover until they are soft. Meanwhile, saute a chopped onion and some garlic. Then mix in the cooked lentils (plus a little water if needed) with a small package of cauliflower rice, and one can of mild green chilis, drained, plus a packet of taco seasoning. I add cayenne pepper as needed. Let that cook on very low heat for a while, add water if you need to, if it starts getting dry.
  • If you dont want to use taco packets, then you can make your own taco seasoning, use very generous ground cumin, oregano, dried minced garlic. Just google homemade taco seasoning and then leave out any salt. But at a minimum should be lots of cumin, oregano, garlic. You will not need chili powder if you use the canned mild chilis (that is my secret ingredient when I make actual chili too).
  • I just made this for a big family dinner, has the texture and exact taste of taco meat.
