Sheet Pan Salmon with Mushrooms and Bok Choy
Ingredients
  • 2 tablespoons vegetable oil, plus more for greasing
  • ¼ cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sesame oil
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons black sesame seeds
  • ¼ teaspoon red pepper flakes
  • 3 garlic cloves, minced
  • 2 cups (8 ounces) snap peas
  • 2 cups (7 ounces) shiitake mushrooms, stemmed and quartered
  • 1 red bell pepper, cored and thinly sliced
  • One 16-ounce bok choy, cut into 2-inch pieces
  • Kosher salt and freshly ground black pepper, to taste
  • One 3-pound plank salmon, skin on
  • Chopped cilantro leaves, for garnish
  • Lime wedges, for garnish
