Chipotle Glazed Chicken Salad - Cafe Zupas

Ingredients
  • subheading: To make individual salads:
  • 2 cups lettuce
  • 2 Tbsp. black beans
  • 2 Tbsp. diced tomatoes
  • 2 Tbsp. red peppers, sliced and chopped in 1” strips
  • 1 Tbsp. diced red onion
  • 1 Tbsp. shredded cheese
  • 3 strips avocado
  • 1 oz. tortilla strips
  • 3 Tbsp. baked chicken- diced
  • 2 Tbsp. chipotle ranch
  • 1 Tbsp. honey cilantro glaze
  •  
  • subheading: Chipotle Ranch Dressing:
  • 1c. ranch dressing (bottle or make your own...we prefer homemade)
  • 10 shakes of Franks HOT sauce
  • ½ t. cumin
  • a few drops of lime juice (or lemon, we've done both)
  •  
  • subheading: Honey Cilantro Glaze:
  • ¼ cup extra virgin olive oil
  • 2 tablespoons finely chopped fresh cilantro
  • 1 to 2 large, fresh cloves garlic, minced
  • ⅛ teaspoon seasoned rice wine vinegar
  • ¼ teaspoon crushed red pepper flakes
  • 1 ¼ teaspoons honey
  • 3 tablespoons fresh squeezed lime juice (approximately 1 to 2 limes)
  • ¼ teaspoon salt
Steps
  1. Top your lettuce with black beans, tomatoes, cheese, chicken and tortilla strips. Serve dressing on the side.

  5. In a small bowl, mix all ingredients together with a whisk or process all ingredients together in a food processor.
