  • 3 medium red potatoes cut in ½-inch chunks
  • 1-15 oz can can crushed tomatoes
  • 1-15 oz can chickpeas, rinsed and drained
  • 2 cups vegetable stock (or water)
  • 1 cup frozen peas
  • coconut milk (optional)
  • salt and pepper to taste
