2 tbsp arrowroot starch

2 tsp chipotle chili powder *see note if you don't want spicy

½ tsp cumin

½ tsp sweet paprika

1 tsp garlic powder

½ tsp onion powder

½ tsp dried oregano

1 tsp kosher salt

3 tbsp tomato paste

2 cups beef broth

subheading: For the Chicken Mixture:

2 cups shredded chicken I use rotisserie chicken

1 4oz can chopped green chiles, undrained

1 150z can low sodium black beans, drained and rinsed

subheading: For the Enchiladas:

1.5 cups cheddar and monterey jack shredded cheese blend

12 tortillas I use Siete Foods grain-free cassava flour tortillas

2 green onions, sliced, for serving

cilantro, for garnish
