  • 50g granulated sugar (if you like a sweeter doughnut you may use up to 75g)
  • 4g salt
  • 7.5 g instant yeast
  • 1 egg yolk (17g)
  • 75g lard or shortening
  • 275g water (up to 300g depending on humidity)
  • vegetable oil or lard

  • ⅓ c whole milk
  • 1 tbsp corn syrup
  • 3 oz bittersweet chocolate, chopped
  • ½ tsp vanilla paste
  • 2 tbsp butter
  • 1 c confectioner’s sugar
