Summer Couscous Salad
Ingredients
  • 1 cup cooked ptitim (pearled couscous)
  • 1 ½ cups chopped zucchini
  • 1 ½ cups chopped yellow squash
  • 1 chopped red bell pepper
  • 1 clove garlic, minced
  • 2 tablespoons mixed fresh herbs (such as parsley, basil, and/or dill), plus more for garnish
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar or lemon juice
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
