Shrimp and Cauliflower "Grits"
Ingredients
  • 1 large head cauliflower (about 2 pounds), trimmed and cut into small florets
  • 1 cup 1 percent milk
  • 3 tablespoons unsalted butter
  • Kosher salt and freshly ground black pepper
  • ⅓ cup grated Parmesan
  • 1 ¼ pounds peeled and deveined tail-on medium shrimp
  • 2 large cloves garlic, minced
  • Pinch cayenne pepper, optional
  • 2 tablespoons roughly chopped fresh parsley
  • Juice of ½ lemon, plus lemon wedges, for serving
