Chicken Schnitzel with Celeriac Remoulade
Ingredients

  • 1 skinless, boneless chicken breast
  • 1 tbsp plain flour, seasoned with salt and pepper
  • 2 eggs, 1 beaten
  • 30g dried breadcrumbs (panko or homemade from old bread)
  • 4 tbsp vegetable oil
  • sea salt and freshly ground black pepper
  • subheading: FOR THE CELERIAC REMOULADE:
  • ¼ small celeriac, peeled and finely sliced into matchsticks
  • finely grated zest and juice of ½ lemon
  • ½ tsp wholegrain mustard
  • 3 tbsp good-quality shop-bought mayonnaise
  • 1 tbsp finely chopped flat-leaf parsley
