Basic Cinnamon Coffee Cake

  • ½ teaspoon table salt
  • ½ cup (2½ ounces/71 grams) all-purpose flour
  • 4 tablespoons unsalted butter, melted

  • 2¼ cups (11¼ ounces/319 grams) all-purpose flour
  • 1¼ cups (8¾ ounces/248 grams) granulated sugar
  • 1¼ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon table salt
  • 1 cup whole milk
  • 1 large egg plus 1 large yolk, lightly beaten
  • 2 teaspoons vanilla extract
  • 12 tablespoons unsalted butter, melted

  • note: We developed this recipe using a metal baking pan. If using a glass or ceramic baking dish, increase the baking time to 55 minutes and let the cake cool for 45 minutes before cutting it. We prefer dark brown sugar in this recipe, but you can use light brown sugar instead.
