Sweet and Spicy Cucumber Slices - FP Friendly

Ingredients
  • 3 cucumbers, sliced
  • 2 tsp sea salt
  • ½ cup rice vinegar
  • ½ cup water
  • 3 Tbsp Truvia
  • ¼ tsp red pepper flakes
  • 2 Tbsp dried minced onion
Steps
  1. Place cucumber slices in a colander sitting over a bowl, sprinkle with salt and toss well.
  2. Let sit for 1 hour refrigerated.
  3. Toss cucumber a few times while they drain as well.
  4. While cucumber slices are draining, prepare marinade by combining vinegar, water, sweetener and red pepper in a small saucepan; bring to a boil.
  5. Reduce heat, cook until reduced to a ⅓ cup (about 10 minutes).
  6. Remove from heat and add onion.
  7. Let mixture cool to room temp.
  8. Pat cucumbers dry with a few paper towels and then combine with the vinegar mixture.
  9. This can be served immediately, but for best results refrigerate until well chilled.
