  • 1 bunch radishes sliced into ¼ inch thick rounds
  • 1 large fennel bulb (trimmed of stalks), cut into ½-inch wide strips
  • 3 ½ cups white vinegar
  • 1 ½ cups white sugar
  • 1 ¾ cups water
  • 3 large garlic cloves smashed
  • 1 ½ Tbs Kosher salt do not use iodized
  • 1 tsp red pepper flakes
  • ½ tsp fennel seeds
