  • 1 lb carrots peeled and cut into 3-4-inch strips (quartered or about 1/2 inch thick)

  • 3 large garlic cloves smashed
  • 1 1/2 Tbs Kosher salt do not use iodized
  • 1 tsp red pepper flakes
  • 1/2 tsp fennel seeds
