Frijoles Borrachos (Drunk Beans) or Frijoles Charros (Cowboy-Style Beans)
You'll find this style of beans at MANY Mexican special occasion meals.
Ingredients
  • 2 lbs pinto beans
  • 16 cups water
  • 1 can of beer of your choice (Or you can leave them out and call them Sober Beans)
  • 16 servings of either ham soup base or chicken soup base (I use Tone's bases cause I'm too cheap to use
  • the Penzey bases LoL. Most bases are 6 grams per teaspoon which makes one cup stock. Thus that would
  • be 96 grams aka 3.4 ounces of Tone's chicken base)
  • One medium onion halved, plus one medium onion diced
  • 1 small bunch cilantro left whole, plus 1 small bunch cilantro chopped finely
  • 1 to 2 jalapenos halved lengthwise, plus 1 to 2 jalapenos FINELY diced (you may cut jalapeno length wise and
  • gut it out completely of all seeds and VEINS and rinse in cold water or  substitute 1 bell pepper divided if
  •  
  • you SERIOUSLY don't care for the heat)
  • 2 to 4 whole garlic cloves
  • 2 tablespoons tomato paste (optional, however it adds some body and darkness)
  • ground pepper to taste
  • Do not add additional salt YET. The base has PLENTY of salt.
