makes great sausage crumbles as well as PHENOMENAL 'brats' by rolling uncooked mixture in brown rice spring roll wrappers
Servings: 4 boxes tofu makes 24 brats each w ½ cup filling

Ingredients
- 4 boxes frozen thawed and squeezed firm tofu or 2 bags soy curls, soaked, drained, and squeezed
- 2 T garlic powder
- 4 tsp onion powder
- 2 T dried thyme
- 2 T fennel seeds
- 2 T rubbed sage
- 2 tsp smoked paprika
- 1 T red pepper flakes
- 4 tsp salt
- 4 tsp ground black pepper
- 1 cup walnuts
- ½ cup parsley, fresh, packed
- 2 T tahini
- 2 T ACV
- 3 T maple syrup
- 1 tsp liquid smoke
- 2 to 4 T Worcestershire sauce
- 1½ T molasses
Steps
- mix all together
- * if soy curls : put through OLD FASHIONED CRANK GRINDER using larger disc
- can be spread on parchment and baked into sausage crumbles for pizza, tofu scramble, etc.
- OR... wrap in brown rice spring roll wrappers to make link sausage, hot dogs, or brats
- these were great tossed in the air fryer at 350 for 8 to 10 minutes
Notes
- Also good chopping soy curls into smaller bits, not as small as ground, and using seasonings...makes chunks of soysage for pizza.
