Ingredients
  • 6 ounces, high quality semi-sweet chocolate, finely chopped •
  • ¾ cup heavy cream
Steps
  1. Place the chopped chocolate in a bowl.
  2. Scald the cream.
  3. Pour the hot cream over the chocolate and gently stir to melt all the chocolate.
  4. This can be made up to 3 days before and reheated slightly for use.
  5. The glaze should drizzled over the puffs when its room temperature, or slightly warm, but still liquid. If the glaze is hot, it will drip too much.
Notes
  • 12/14/12 - I cut this recipe in half and it worked out well. I added a pinch of kosher salt. I dipped brownie bites in the ganache.
