Sausage Tomato Courgette Pasta

Ingredients
  • olive oil
  • 2 Black Farmer sausages, cut into chunks
  • 1 clove garlic, ideally fresh garlic
  • 2 courgettes, cut into discs
  • a handful of sunblush tomatoes if possible
  • a spoonful of tomato puree
  • squeeze of lemon if possible
  • 4 to 5 vine tomatoes, chopped
  • a handful of basil leaves, shredded
  • tortiglione for two
  • parmesan to serve
  • focaccia to serve
Steps
  1. put your pasta on to cook. fry the sausages until browned a bit. add the garlic and when you start being able to smell it add the courgette. turn the heat up and cook stirring regularly, until the courgette begins to soften. add the tomatoes, sunblush and puree and cook until saucy. squeeze in lemon. remove from the heat, mix with the pasta and basil.
