Tangy Dill Pickle Hummus
Ingredients
  • 2 x 15.5oz jars garbanzo beans or chickpeas, rinsed and drained well (or cook your own at home)
  • ½ cup chopped dill pickles
  • ¼ cup pickle juice/brine
  • 2 fresh garlic cloves, sliced
  • small handful of fresh dill
  • ¼ cup tahini or sesame paste
  • 1 fresh lemon, juiced
  • ½ tsp ground coriander seed, or to taste
  • 1 tsp sea salt, or to taste
  • To serve: fresh cauliflower florets, celery sticks, bell pepper slices, and carrots sticks
